Herbal Electuaries and Truffles

Satisfy your sweet tooth with Herbal Electuaries and Truffles! Learn how easy and fun it is to combine simple pantry ingredients with wildcrafted herbs to make candies that are both delicious and nutritious. We'll discuss the health benefits of each of our ingredients and then the aprons will go on! In this course, you will learn how to make a basic Herbal Electuary, and two herbal truffles (yes, chocolate!) This will serve as the inspiration from which you will make & take your own delights.

Introduction to Traditional Cooking

Roberta Devers-Scott

In this class Roberta will share the teachings of the Weston A. Price Foundation. Dr. Price studied isolated, non-industrialized people and determined what common foods seemed to lend to their perfect physical form, and exquisite health generation after generation. We will discuss those teachings and learn to apply the principles in our own kitchens. We will discuss the importance of proper food preparation by soaking, sprouting and fermenting. We will learn to prepare bone broths and grind our own sprouted flour for bread baking and finally, we will share a surprise food that Roberta will prepare ahead.

Introduction to Fermentation

The process of lactic-acid fermentation increases vitamins, enzymes and beneficial bacteria naturally present in all foods. Fermented foods are healing foods and traditional foods. They should be included in all diets. In this class, Roberta will teach us how to make kombucha, kefir, sourdough starter (for bread baking), cultured butter and sauerkraut.

Seasonal Attunement - Walking the Wheel

Experience the seasons in a deeper way as we follow nature's journey through spring, summer, fall and winter. Using the sustainable blueprint of the Native American Medicine Wheel as our guide, we will create a Medicine Wheel from natural objects. Then walking the wheel, we'll stop at each segment for an in-depth look at: purpose of season, relationship of direction to season, animal totems, the elements, season to body organ relationship, and the life cycle and energy of plants. Then we'll return to the course room for the hands-on portion of our class where each of us will create our own seasonally attuned herbal preparation: Spring - Plant Infused Oils, Vinegars & Butters; Summer - Best Dressed Salads & You; Fall - Botanical Scrubs for Face and Body; Winter - Breathe Deep Salve. A seasonally inspired lunch is included with your materials fee!

We will learn to use our own cultures rather than store bought and will even discuss how to make homemade rennet. This class will focus on Camemberts, Bries, Cheddar, Whey Ricotta, Cultured Butter and Yogurt. We will conclude by discussing proper aging techniques.

The Ins and Outs of Herbal Infused Vinegars

Herbal infused vinegars are easy to make and fun to take! Using just a few simple ingredients from the great outdoors, we will create infusions that can be used for internal and/or external applications. As we chop, we'll discuss the many benefits of apple cider vinegar and the added value in combining its restorative properties with wild plants, cultivated herbs and veggies! During our time together, you will have the opportunity to make an herbal infused vinegar of your choice, and my "must have" curative formula for cold weather imbalances.

Sacred Union of Plant & Water

Herbalist Margo Mullein will prepare for you a delightful journey for the senses! Explore the differences between a "polite cup of tea" and an infusion of plants made with the purpose of increasing and aligning wholeness and balance. This is a touch and taste workshop! We'll take a walk outdoors for a simple harvest. Then we'll come into the class room for a hands-on infusion making experience. As we sip the prepared infusions, we'll discuss the many roles which tea, and plant infusions have played throughout history and the benefits of inviting them into your life.
